OK OK, seriously... I'm NOT braggin. I'm actually AMAZED I didn't burn or otherwise ruin this dinner. Lately I've not had great luck when trying new recipes. I'm not used to my new stove, or my smaller, poorly laid out kitchen here in our townhouse, I also usually have a little guy sitting in his high chair demanding more of whatever he's into that day (graham crackers, goldfish, bits of avocado, for example) right at a crucial moment in the cooking process. Yesterday I decided to be really intentional about dinner. Stephen haven't been out on a real date in over a month and we had such a fantastic day exploring Charleston that I decided to put the ingredients for this dish on my shopping list for that day. I waited until David was fed bathed and just about ready for bed and I put Stephen in charge of bedtime BEFORE I started cooking. There were a few inturruptions such as "babe, where do we keep the diapers down here" and "haha, come look at what David is doing it's so cute!!" but I didn't lose focus! When David was down, dinner was ready and Stephen and I enjoyed a really nice time together! What a great "in home" date! PS Pinot Grigio goes really well with this recipe ;-)
